Today is National Bologna Day. As processed meat goes I do enjoy it but those nitrites contained therein have been a cause for caution in my dietary habits. I try to quell the propensity for nitrosamine formation by increasing the vitamin C and taking other nutrients which aid toward that end. I don't eat bologna because it's bad for me. I eat it because I like it. Bologna is named after the Italian city Bologna. There it is known as mortadella — a sausage with bits of lard and peppercorns in it. A fried bologna sandwich and beverage makes for a wonderful meal. If you don't care for cold cuts you don't know what your missing. Again, I strongly recommend Wunderbar bologna.
