Today is the Day of the Mushroom. By all accounts it appears to be a marketing thing by the Mushroom Council.
Mushrooms are an edible fungal growth and usually have a domed cap on a stalk, with gills on the underside of the cap. However, some of my favorite varieties deviate from this usual and customary configuration.
The Lion's Mane mushroom is one I consume regularly for the health benefits they are said to impart.
Also, when I accompany my girl to Longhorn's for our monthly steak I like mushrooms and onions served with mine while she likes hers without.
The shitake mushroom is another edible variety which grows on fallen timber. It is also cultivated in Japan and China. It is touted for reduction of cholesterol levels in the blood.
They also contain beta-glucans that reduce inflammation and help prevent the intestines from absorbing cholesterol and support immune health.
Be all of this as it may I have been eating mushrooms for the better part of my life and plan on continuing to do so.
I recommend them without reservation because I view them as a 'trusted tried and true' superfood.
